Why is this penny gold in color and are the letters and partial date due to grease build up on die? Also it weighs 2.87g if that matters.

In my opinion, that looks like some serious pitting from environmental damage. It may have been in the ground for a period of time. If it was, it was found and cleaned. Or, it was a victim of some sort of acid based treatment. In any event, the patina was stripped off the coin.
